The update timestamp in the upper left corner of the website provides the time when diff updates were fetched the last time. Afterwards it takes about one hour for processing until these changes are available in the main database. Tile updates take longer (up to about two days) but I plan to change the tile update in order to prioritise those tiles which are visited more often (currently all tiles with changes get treated equally). Updates are currently applied 7 times per day. You can check the freshness of map tiles at the debugging page at https://tiles.openrailwaymap.org/#osm.org/10/50.124841/8.673023&overl... by right-clicking on a tile and selecting the "tile status" option.
